Fall is just around the corner and with the season comes delicious recipes that will for sure please those that are in the mood for a warm fall breakfast. What better way to wake up in the morning and kick off the season than fresh pumpkin pancakes that will give you that subtle taste of the warm fall feel? These pumpkin pancakes have all of the autumn flavors that everyone knows and loves. The soft brown sugar, crunchy pecans and of course that flavorful pumpkin taste.
For this recipe you will need:
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon pumpkin pie spice
- 1 and ¼ cups pumpkin puree
- ⅓ cup light brown sugar
- 1 large egg
- 3 tablespoons canola or vegetable oil
- 1 and ½ cups of whole milk
- Optional: 1 cup of semisweet chocolate chips
Directions:
- In a large bowl whisk together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice until just combined.
- In a separate bowl (preferably a stand mixer) add the pumpkin puree, brown sugar, an egg, oil, and whole milk and mix together for about 45 seconds until there are no lumps.
- Next, you can either use a blender or a stand mixer to combine together the pumpkin, brown sugar, egg, oil, and whole milk to a blender/bowl and blend/mix together on high for at least 45 seconds.
- Then, pour the wet ingredients to the dry ingredients and stir until just combined. Make sure there are no lumps of flour in the batter, once there are no lumps, add the chocolate chips.
- Once the batter is finished, heat up a griddle to 375 degrees Fahrenheit. Coat the griddle generously with nonstick cooking spray. Once the griddle reaches the correct temperature, pour a heaping ¼ cup of batter onto the griddle. Wait about 2-3 minutes or until bubbles start to form on the surface. Once bubbles form, flip the pancake and wait another 2-3 minutes or until golden brown.
- When the pancakes are ready, take them off of the heat and serve immediately with maple syrup, powdered sugar, pumpkin pie spice, whipped cream, whatever your heart desires.
